well for the seven year old let her or him draw a picture of a christmas tree and him her with there grandpa and the three year old shoould make a well here let him stick there hands in paint and put it on paper and write merry x-mas grandpa? that is what my 5 year old son has done
You could make ornaments out of the oatmeal boxes and put the pictures on them or use some card board you have laying around. You could make a photo album for them (it was a hit with mine).
take empty clear beer bottles, and take off all the lables and such.
have them design something to wrap around the bottle to make it look nice, and then, have them write a little note or letter to them.
roll up the letter, and tie it with a ribbon and put it in the bottle.
you can put a cork in it, if you want to close it up.
i made them for all my relatives, but i really designed them nice.
it would still be a good idea for your kids.
Use the christmas cards in a scrapbook. Like the christmas card could be the mat for the picture. Make a collage with pictures and christmas cards in one frame. Find a table that can be enclosed but has a class surface, make a collage with the pictures and christma cards. But the collage will be enclosed with either wood on the sides and glass on top, or something else.

My sister got a digital picture frame from Walmart and uploaded as many pictures of us over the years in it as you can, and then wrapped it and gave it to our grandparents, they loved it.
They have these cheap kits that come with these little snow globes and you can put your own pictures in them and give them out as gifts, your children can color their own pictures or make signs and put them in as well.

they did basically the sam thing cept instead of using icing they dipped teh whole thing in choclate.
