Several things come to mind….
Laundry Balls (these are devices you place in the dryer ..they take the place of fabric softener)

House plants

A mushroom growing kit (this is actually very cool. Mushrooms grow out of the medium and then you eat them! Organic and fresh!)

A fly swatter (not a cool gift, but hey, it reduces pesticide use!)

Hemp oil lotion

Organic food.

Apartment living is somewhat "green" as it is.
